How to Make a Cutting Board

The classic first project, start to finish: choosing boards, the glue-up, flattening without a planer, and a food-safe finish that lasts.

A cutting board is the first project almost everyone should build. It needs no joinery, no machines you do not have, and about six hours spread over two evenings and a cure. It teaches the two skills that underpin everything else — a straight edge and a controlled glue-up — and it ends with an object that lives in the kitchen and gets used every day.

This is the edge-grain version, which is the one to build first. End grain boards are handsome, kinder to knives, and roughly four times the work with several new ways to go wrong.

Choosing the wood

Three requirements, and they narrow the field quickly.

  • Close-grained. You want tight pores that do not trap food. Hard maple is the traditional answer; cherry, walnut and beech all work. Avoid red oak and ash — their open pores run through the board like drinking straws.
  • Hardwood, not softwood. Pine and fir score deeply under a knife and the surface breaks down fast.
  • Identified. Some species are irritants or worse. If you cannot name the wood, do not put food on it. Our wood species guide covers what to look for at the rack.

Buy the boards a week before you need them and stand them in the shop with spacers between, so they finish moving before you cut them — see how to store lumber in a garage. Roughly 3/4 to 1 inch finished thickness is right; thicker looks better and costs more.

Step 1: rip the strips

Rip your boards into strips of equal width — anywhere from about 1-1/4 to 2 inches works. Cut them a couple of inches longer than the finished board, because the ends will be trimmed square at the end.

Then lay the strips out and rearrange them. Two things to look for:

  • Alternate the growth rings. Look at the end of each strip and flip every other one so the rings curve in opposite directions. Any cupping then works against itself across the panel rather than compounding.
  • Note the grain direction on each face. Mark an arrow on each strip in the direction that planes cleanly, and try to get them mostly pointing the same way. It makes flattening dramatically easier later.

Number the strips across the top with a pencil once you are happy, so the arrangement survives the glue-up.

Step 2: get the mating edges right

This is the step that decides whether the board has visible glue lines, and it is where most first attempts fall down.

Each pair of edges must meet with no light between them along their whole length. Test it dry: hold two strips together up to a window. If you can see daylight anywhere, that gap will be a glue line you can see forever, because a clamp can pull it shut but the wood will spring back.

Fixing an edge is a hand plane job — a couple of passes, testing as you go, as covered in how to use a hand plane. If you have a table saw with a good blade and a fence you trust, a fresh rip cut may be good enough straight off the saw.

Step 3: the glue-up

Do a full dry run first, with the clamps you intend to use, and time yourself. This is the only timed operation in the project.

  1. Use a waterproof glue. A type III water-resistant wood glue. The board will be washed hundreds of times, and a non-waterproof joint will eventually let go. See wood glue explained.
  2. Thin, even coverage on every mating edge. Spread it with a finger, a brush or a scrap. You want full coverage, not a heavy bead.
  3. Clamp with even pressure, alternating above and below. Clamps only underneath will bow the panel upward. A clamp above and below, alternating along the length, keeps it flat.
  4. Stop at a thin even bead of squeeze-out. More pressure than that starves the joint rather than strengthening it.
  5. Check it is flat before walking away. Sight across the panel and use a straightedge. Five minutes of adjustment now saves an hour of flattening later.

Scrape the squeeze-out when it reaches a rubbery, cheese-like state — usually within the hour. Wet glue smears into the grain and shows under finish; fully cured glue is hard work to remove.

Step 4: flattening, without a planer

Leave the panel clamped for the full cure time on the bottle, not just until it feels solid. Then flatten both faces.

Do not run a glued-up cutting board through a thickness planer if the strips run in different grain directions — it will tear chunks out, and there is no fixing it. Three better options:

  • Hand plane. Work diagonally across the panel first to knock the high spots down, checking with a straightedge in several directions, then finish along the grain with a fine cut. Quiet, cheap and genuinely fast at this size.
  • Router sled. A router in a shop-made carriage running on two straight rails either side of the panel. Very accurate, no new tools if you own a router, and it leaves a ridged surface that sands out quickly. See how to use a router safely before you build one.
  • Random orbital sander. Works, slowly, and it is the easiest way to dish a panel without noticing. Check constantly with a straightedge and keep the sander moving.

The target here is flat, not smooth. A smooth board that rocks on the counter is a failed board.

Step 5: trim, shape and sand

Cut both ends square — a circular saw against a clamped straightedge is fine, and the method is in how to cut plywood with a circular saw.

Then ease every edge and corner. A 1/8 or 1/4 inch round-over with a router, or a few passes with a block plane and sandpaper. Do this properly — a board is handled wet, often one-handed, and sharp corners are both unpleasant and vulnerable.

Sand up through the grits to about 180 — the stopping point our grit guide gives for an oil finish, because sanding finer closes the pores and the board then drinks less oil. Then raise the grain: wipe the whole board with a damp cloth, let it dry fully, and sand lightly again at the same grit. This matters more here than on any other project, because the board is about to be washed repeatedly — do it now and the surface stays smooth instead of turning furry the first time it meets a sink. Optional: a juice groove routed around the top face, and finger recesses on the ends. Both are nice, neither is necessary, and a juice groove makes the board harder to clean.

Step 6: the finish

Food-grade mineral oil, and nothing complicated.

  1. Flood the whole board — all faces, all edges — with oil.
  2. Let it soak in for several hours, or overnight.
  3. Wipe off everything that has not been absorbed.
  4. Repeat until the board stops drinking it, which usually takes three or four rounds.
  5. Optionally finish with a board conditioner — a mineral oil and beeswax blend — which slows moisture loss and gives a better feel.

White mineral oil meeting USP standards is permitted for food contact under 21 CFR 172.878, and it will not go rancid. That last point is why kitchen oils are the wrong answer here: olive or vegetable oil turns sour and the board smells.

Caring for it, and what to tell whoever you give it to

  • Hand wash only. Soap, water, rinse. Never the dishwasher — heat and prolonged soaking open the glue joints.
  • Never soak it. Do not leave it in the sink.
  • Dry both faces and stand it on edge. A board dried on one side only will cup.
  • Re-oil when it looks dry or pale. Weekly at first, then monthly, then whenever it looks thirsty.
  • Sand and re-oil if it gets rough or stained. A wooden board is repairable indefinitely, which is the whole point of it.

Why this project first

Because it teaches the two things everything else depends on. A straight edge, tested against another straight edge, is the foundation of all accurate work. A controlled glue-up — dry fit, even glue, even pressure, flat panel — is the operation every larger project repeats at a bigger scale.

And unlike a practice joint in a scrap, it ends up in the kitchen, where you will look at it every day and notice exactly which part you would do differently. That is worth more than any tutorial.

What wood is best for a cutting board?

Close-grained hardwoods: hard maple is the traditional choice, with cherry, walnut and beech all working well. You want a dense, tight-pored wood that resists knife scoring and does not trap food in open pores. Avoid open-pored species such as red oak and ash, softwoods like pine, and any wood you cannot identify.

What is the difference between edge grain and end grain cutting boards?

Edge grain boards are strips glued side by side with the long grain facing up — simpler to build, more stable and perfectly good. End grain boards are made from short blocks stood on end, so the knife cuts between the fibers rather than across them: kinder to knife edges and self-healing, but far more work and much more prone to movement problems. Build edge grain first.

What glue do you use for a cutting board?

A wood glue rated as waterproof — the type III water-resistance rating — because the board will be washed repeatedly. Cured wood glue in a properly made joint is not in meaningful contact with food anyway, but a board glued with a non-waterproof glue will fail at the joints over time.

How do you flatten a cutting board without a planer?

Three ways. A hand plane and a straightedge is the quietest and cheapest. A router mounted in a shop-made sled running on rails over the panel is very accurate and needs no new tools if you own a router. A random orbital sander with coarse discs works but is slow, dusty and easy to dish — check constantly with a straightedge.

What finish is food safe for a cutting board?

Food-grade mineral oil, often with beeswax blended in. White mineral oil meeting USP standards is specifically permitted for food contact under 21 CFR 172.878, and unlike vegetable oils it never goes rancid. It is a maintenance finish — reapply whenever the board looks dry, which at first may be weekly.

Can you put a wooden cutting board in the dishwasher?

No. The combination of prolonged soaking and high heat will open the glue joints and crack the board — it is the single most common way a handmade board is destroyed. Wash by hand with soap and water, rinse, dry both faces, and stand it on edge so air reaches all sides.
